Baked pork chops

ingredients

to serve 4
4 Pork chops
Salt and pepper
2 tbsp Oil
1 lb (450 g) Cooking apples
1 oz (25 g) Butter
1 tbsp Chopped fresh rosemary
1/4 pint (150 ml) Stock

method

1. Preheat the oven to 400°F (200°C) Gas 6.

2. Season chops with salt and pepper. Heat oil in a flameproof casserole and brown the chops for 2 minutes on each side.

3. Peel, core and slice apples. Arrange in casserole round the chops and dot with the butter. Sprinkle with rosemary, add stock (made with 1/2 stock cube if liked) and cover casserole.

4. Bake in the centre of the oven for about 30 minutes, removing lid for last 10 minutes of cooking time. Serve with creamed potatoes and salad.
