1 tbsp sunflower oil
400 g long-life beetroot, cubed
1 small onion, peeled and chopped
300 g potatoes, peeled and cubed
400 g can chopped tomatoes
300 ml tomato juice
300 ml vegetable stock
1. Heat the oil in a large pan and fry the beetroot, onion and potatoes for 2 to 3 minutes. Add the chopped tomatoes, tomato juice and stock, and bring to the boil. Cover and simmer for 35 minutes.
2. Blend in a food processor or with a hand blender until completely smooth.
3. Heat through gently and serve with the Witches' Fingers.
