Pork Chops with Barbecue Sauce

Oven : Preheat to 180°C (350°F, gas mark 4),

ingredients

serves 4
4 spare rib chops
1 medium onion
1 tablespoon virgin olive oil
3 teaspoons horseradish sauce
1 teaspoon mustard powder
1 teaspoon celery seeds
14 oz (400 g) can chopped tomatoes
2 tablespoons honey
1 tablespoon malt vinegar
1 tablespoon Worcestershire sauce
Chopped parsley for garnish

method

1. Chop the onion roughly. Heat the oil in a saucepan and saute the onion over a medium heat for 8 minutes until transparent.

2. Add all the other sauce ingredients. Cover and simmer for 10 minutes.

3. Meanwhile, trim any rind and fat from the spare rib chops and place them in an ovenproof dish large enough to hold them in a single layer.

4. When ready, spoon the barbecue sauce over the chops, cover and bake in the preheated oven for 45 minutes until thoroughly cooked and tender. Garnish with parsley and serve immediately.
