1. Remove the rack of the grill pan.
2. Wipe the fish and season it with salt and pepper, Place, skin side up, in the bottom of the grill pan.
3. Heat the grill to give a medium heat.
4. Mix together all the other ingredients except the parsley, and pour over the fish.
5. Grill steadily for 15 minutes, turning once and basting frequently with the sauce.
6. Sprinkle with chopped parsley and serve immediately.
