Chicken and Grape Tarts

ingredients

makes 6 tarts
1 1/4 cups (200 g) 7 oz wholewheat flour
1 tsp salt
1/2 tsp baking powder
2 small eggs
3/4 stick + 1 tbsp (3 1/2 oz) 100 g butter
400 g (14 oz) cooked chicken
1/2 tsp each salt and freshly ground white pepper
500 g (18 oz) green grapes
8 gherkins
4 oz (100 g) cream cheese
6 tbsp soured cream
2 tbsp tomato puree/paste
1/4 tsp dried basil
18 leaves fresh basil
butter to grease 6 tins, 8 cm (3 1/2 in) across

method

1. Combine flour with 1/2 tsp salt and baking powder, make well in centre.

2. Break eggs into well and put butter in dabs around edge.

3. Knead all ingredients together quickly.

4. Finely chop chicken and season with 1/2 tsp salt and pepper.

5. Halve and seed grapes. Finely chop gherkins.

6. Using a wire whisk, combine cream cheese, soured cream, tomato puree and dried basil. Add chopped gherkins, grapes and chopped chicken.

7. Preheat oven to 180°C (350°F) gas mark 4. Grease tart tins with butter.

8. Roll out pastry, line tins and bake in centre of oven for 15 minutes.

9. Leave pastry shells to cool before filling with chicken mixture and garnishing with basil leaves
