ingredients

serves 4
1 lb (450 g) potatoes, boiled
Pork lard, or oil

method

1. Pass the cooked potatoes through a ricer or sieve.

2. Heat the lard or oil in a heavy frying pan.

3. Flatten the potatoes into a cake shape in the pan and cook until well browned on the underside.

4. Finely diced onion may be added to this dish, if required.

5. Carefully turn upside down so that the brown side is uppermost, on to a plate.
