French Beans with Cream Sauce

ingredients

serves 6
600 g french bean (green bean)s
1/2 stick (2 oz) 50 g butter
1 egg
2 tsp grated Parmesan cheese
125 ml single cream (Light cream)
2 tsp lemon juice
a pinch of grated nutmeg
salt and black pepper

method

1. Prepare the beans and boil or steam them until almost tender. Drain thoroughly.

2. Heat the butter in a saucepan, add the beans, cover, and cook over gentle heat, shaking the pan frequently, until they are quite tender.

3. Meanwhile, beat the egg in a small pan until liquid.

4. Add the cheese, cream, lemon juice, nutmeg and seasoning, and heat gently, without boiling.

5. Spoon the beans into a serving dish, pour the cream sauce over them, and serve as soon as possible.
