Mangetout with Cottage Cheese

The flavour of these tender, edible pea pods (known as snow peas) is preserved by keeping the steaming time down to a minimum. Prepare the mangetout by trimming the tips and removing the strings.

ingredients

serves 4
8 oz (225 g) large-sized mangetout
7-8 anchovy fillets
12 oz (350 g) cottage cheese
Salt and freshly ground black pepper

method

1. Cut the anchovy fillets into halves and leave to soak for 20 minutes to remove excess salt. Prepare the mangetout and place them in a large steaming basket set over boiling water. Steam for 1 minute, then rinse immediately under cold running water.

2. Chop the anchovies into small pieces. Drain any liquid from the cottage cheese and then mix the anchovies into it, seasoning to taste.

3. Using a sharp knife, take each mangetout and cut away a sliver along the whole length of the pod on one side, and then ease open.

4. Fill the mangetout carefully with the anchovy-flavoured cottage cheese by pressing it in with a pointed knife or using a piping bag. Dust with pepper and serve.
