1/2 small white cabbage
2 tart dessert apples
50 g (2 oz) salted peanuts
150 ml (1/4 pint) mayonnaise
1 tablespoon lemon juice
salt and pepper
1. Core and finely shred the cabbage. Halve and thinly slice the onion. Peel and coarsely grate the carrots.
2. Peel, core and coarsely grate the apples. Place all the ingredients in a mixing bowl and toss well.
3. Turn the coleslaw into a serving dish and serve to accompany cold meats and flans.
