Potato Soup

ingredients

serves 4
8 oz (225 g) potatoes, diced
2 stalks celery, diced
1 large onion, diced
1/4 tsp salt
425 ml (15 fl oz) water
2 tbsp parsley, finely chopped
1 1/4 cups (10 fl oz) 300 ml milk

method

1. Put all ingredients except the parsley and milk in a saucepan.

2. Bring to the boil and simmer gently for 1 hour.

3. Add the parsley and milk just before serving and re-heat but do not boil.
