Individual Cheese Tarts

ingredients

100 g (4 oz) shortcrust pastry
75 g (3 oz) Red Leicester cheese, grated
150 ml (1/4 pint) milk or fresh single cream
1 egg, size 2
10 ml (2 tsp) chopped fresh parsley
salt and freshly ground pepper

method

1. Roll out the pastry on a floured work surface and use to line twelve 5 cm (2 inch) patty tins.

2. Put the cheese into a bowl, add the milk or fresh cream, egg, parsley and seasoning. Whisk lightly together with a fork.

3. Using a spoon, divide the mixture between the patty tins. Bake in the oven at 180°C (350°F) gas mark 4 for 20 - 25 minutes. Makes 12

These we so delicious you will almost certainly want to make double quantity

Delicious melt in the mouth and so tasty - although I did use finely grated Parmesan and very strong cheddar instead to give plenty of flavour
