Whole Potato Salad

ingredients

serves 4 - 6
700 g (1 1/2 lb) new potatoes, scrubbed
90 ml (6 tbsp) salad oil
45 ml (3 tbsp) vinegar
1 garlic clove, skinned and crushed (optional)
salt and freshly ground pepper
chopped parsley or snipped chives, to garnish

method

1. Cook the potatoes in boiling salted water for 10-15 minutes until tender. Drain and, while still warm, remove the skins. Put the potatoes into a serving dish.

2. Put the oil, vinegar and garlic (if using) into a screw-top jar. Season well and shake. Pour over the potatoes while still warm and leave to cool for 1 - 2 hours.

Serve sprinkled with parsley or chives.
