Potato and Turnip Casserole

ingredients

serves 8
2 lb (900 g) potatoes, peeled and sliced
2 lb (900 g) turnips, peeled and sliced
1 pt (600 ml) water
1/3 cup (50 g) self raising (self rising) flour, sifted
1 1/4 cup (75 g) soft, white breadcrumbs
2/3 cup (150 ml) 1/4 pt double cream, (heavy cream) whipped
1 tbsp golden syrup (substitute light corn syrup)
1 tbsp (1/2 oz) butter, melted
2 medium eggs, beaten
1 tsp salt
Good pinch of ground allspice, nutmeg and ginger
1/2 tsp white pepper
3 tbsp butter, melted

method

1. Put the potatoes, turnips and water into a large saucepan.

2. Bring to the boil and cook over a low heat for about 25 minutes, until tender.

3. Drain and retain the vegetable liquid.

4. Thoroughly mash the potatoes and turnips until smooth, using an electric beater and adding about 150 ml (5 fl oz) of the vegetable liquid during the beating.

5. When smooth and creamy, gradually add all the other ingredients, including 1 tbsp melted butter.

6. Place the mixture in a well greased 2.4 litret (4 pt) casserole dish, level the top and drip the remaining 3 tbsp melted butter over the mixture.

7. Bake in the oven without a lid Gas mark 2, 300°F (150°C) until the top is nicely browned.

Okay, I'm weird but I've never really liked Thanksgiving! It was proabbly because my grandma didn't make the best food and the turkey was always dry and I don't like pumpkin pie! But I love apple I agree with you on the Christmas music though! Already blasting it while I study, workout, etc. Glee! Ahhh I need to start catching up!
