Hot spiced pork

An unusual dish to cook on a charcoal barbecue, this marinated pork can also be cooked under the grill, though of course the flavour will not be quite so good. Dishes of natural unsweetened yogurt or Cucumber Raita will be welcome to accompany the pork as it is rather hot!

ingredients

4 large pork spare rib chops, trimmed or 2 whole pork fillets (about 1 kg (2 lb), trimmed and cut in half

for the marinade:

2 tbsp vegetable oil
1 garlic clove, crushed with 1 tsp spoon salt
1 - 2 tbsp chili sauce, according to taste
2 tbsp soya sauce
1 tbsp Worcestershire sauce
1 tbsp soft brown sugar
1 tbsp tomato puree
1 tbsp wine vinegar
1 tsp spoon ground ginger
Freshly ground black pepper

method

1. To prepare the marinade: put all the ingredients in a mixing bowl with pepper to taste and stir well.
Put the pork in the marinade and leave for at least 2 hours, preferably overnight.

2. Stir the mixture from time to time to ensure the marinade coats the pork.

3. When the barbecue charcoal or grill is hot, remove the pork from the marinade. If using pork fillet it can be cut into cubes and threaded onto four greased skewers.

4. Lay chops or halved fillets on the barbecue or grill rack. Cook according to taste, turning the pork and basting with the marinade from time to time until all the marinade is used up.

5. Serve immediately with baked jacket potatoes and ratatouille or buttered courgettes.
