Prawn Fritters

ingredients

serves 4
2 slices bread
4 tablespoons cold chicken stock
6 canned water chestnuts
2 eggs
450 g (1 lb) frozen peeled prawns, thawed
salt
1/2 teaspoon finely chopped ginger root
2 tablespoons flour
oil for deep frying

method

1. Cut the crusts off the bread, break the bread into small pieces and moisten with the chicken stock. Finely chop the water chestnuts. Separate the eggs.

2. Squeeze any excess moisture from the bread and mix it with the prawns, water chestnuts, salt, ginger, flour and egg yolks. Whisk the egg whites until stiff, fold them into the prawn mixture and shape into small balls.

3. Heat the oil to 180 c, 350 f in a deep frying pan. Fry 6 fritter^ at a time, making sure that they do not touch each other. Turn occasionally for 4-5 minutes until the fritters are golden brown.

4. Drain them on absorbent paper and keep hot until all the fritters are cooked.

Serve with: Carrot Salad with Oranges or Mushroom Salad

These fritters are great. They have a nice moist texture and taste delicious. spicy and sour. magnificient.

I thought these were better than scampi balls from any supermarket
