Potato Cake Sandwich

ingredients

serves 2
8 oz (225 g) potatoes, cooked and sieved
1 medium egg, beaten
Salt and pepper to taste
Oil for frying
2 rashers grilled bacon
2 lightly fried eggs

method

1. Mix the sieved potatoes with the beaten egg and season.

2. Divide into four equal portions and form into patties or cakes.

3. Cover with cling film and leave in the refrigerator for at least 2 hours, then fry in hot fat until nicely golden and heated all through.

4. Sandwich the grilled bacon and eggs between the cakes.
