Citrus halibut steak

Preparation time: 10 minutes, plus marinating,
Cooking time: 20 minutes.
Oven temperature: 180°C, 350°F, gas 4,
Calories: 215 per portion

ingredients

serves 2
grated rind and juice of 1 orange
grated rind and juice of 1 lemon
grated rind and juice of 1 lime
1 halibut steak, cut in half

for the garnish

2 orange slices
2 lemon slices
2 lime slices

method

1. Place 1 tablespoon of each grated rind and all the fruit juices in an ovenproof dish.

2. Add the fish and baste well. Cover and chill for 12 hours, turning the steaks over after 6 hours.

3. Cover the dish with foil and cook in the oven for 20 minutes. Garnish each portion with an orange, lemon and lime slice.

Prepare this dish sufficiently early in the day to allow time for it to marinate. As the steaks are turned after 6 hours, it is not practical to marinate them overnight!
