Stewed Cherries with Wine Sauce

serves 4
450 g (1 lb) stewed cherries
1 egg plus 2 egg yolks
1 tablespoon sugar
2 tablespoons mint liqueur
5 tablespoons Marsala wine

method

1. Chill the cherries in 4 bowls.

2. Whisk the remaining ingredients together in a bowl over a saucepan of hot water until creamy.

3. Transfer the bowl to ice-cold water and stir until cold. Pour the sauce over the cherries.
