Raspberry chantilly

ingredients

serves 4
450 g (1 lb) raspberries, hulled
1 tablespoon Grand Marnier
2 egg whites
150 g (5 oz) quark
grated rind of 1/2 orange
1 tablespoon caster sugar
25 g (1 oz) toasted flaked almonds, to decorate

method

1. Divide the raspberries equally among four individual glasses or dessert bowls, then spoon over the Grand Marnier. Cover with cling film and chill until ready to serve.

2. Whisk the egg whites stiffly, then gently fold in the quark, orange rind and sugar. Spoon the mixture over the raspberries and decorate with the almonds. Serve immediately.

Quark is a soft white cheese made from semi-skimmed milk. It does not contain salt. The fat content can vary quite considerably so to check the label.
