Parmentier Potatoes

ingredients

serves 4
1 1/2 lb (700 g) potatoes
1 cup (225 g) butter
1 tbsp parsley, chopped for garnish
salt and pepper

method

1. Peel and cut the potatoes into small pieces, about 1cm (1/2 in) square. Season the diced potatoes with salt and pepper

2. Cook in melted butter. 200C/gas 6 in a roasting tin. cook in the oven for about 25 minutes, turning occasionally, until they are golden brown.

3. Sprinkle with the chopped parsley as garnish.
