Candied Sweet Potatoes

ingredients

serves 4
1 1/2 lb (700 g) sweet potatoes
75 ml (3 fl oz) lime juice
1 cup (8 fl oz.) golden syrup (substitute light corn syrup)
1 cup (180 g) dark brown sugar
330 ml (12 fl oz) hot water

method

1. Use small potatoes for this recipe

2. Peel and divide potatoes into four lengthwise, then blanch in boiling water for about 12 minutes.

3. Drain, pat dry and place in a deep-sided roasting tin.

4. Make a syrup by blending all the other ingredients together.

5. Pour over the potatoes and bake in the oven Gas mark 5, 375°F (190°C) until golden brown and candied.

6. Baste several times during cooking.
