ingredients

makes 1 cake
175 g (6 oz) plain flour
pinch of salt
1 teaspoon ground ginger
2 teaspoons ground cinnamon
1 teaspoon bicarbonate of soda
275 g (10 oz) medium oatmeal
175 g (6 oz) black treacle
100 g (4 oz) butter
100 g (4 oz) soft brown sugar
150 ml (1/4 pint) milk
1 egg

method

1. Line and grease a 23-cm/9-in square cake tin. Sift togetherthe flour, salt, spices and soda. Add the oatmeal and toss lightly to mix.

2. Warm together the treacle, butter, sugar and milk until the butter has melted. Cool slightly, add the egg and beat well.

3. Pour into the centre of the dry ingredients and stir rapidly until smooth.

4. Pour into the prepared tin and bake in a moderate oven for 1 - 1 1/2 hours, until a skewer inserted in the centre comes out clean. Cool on a wire rack.

Cook's Tip
Make an interesting apple and raisin parkin by mixing 50 g (2 oz) raisins and 50 g (2 oz) dried apple flakes into the dry ingredients. Combine as above.

A useless recipe. After 1 hour the thing was burnt.
Too sweet as well.
