Chilli con carne


serves 4
1 tbsp vegetable oil
2 onions, chopped
1 clove garlic, crushed
450 g (1 lb) lean minced beef
salt and pepper
1 -2 tsp hot chilli powder OR 1-2 chilli peppers, de-seeded and finely chopped
3 tbsp tomato puree
2 x 400 g (14 oz) can tomatoes
150 ml (1/2 pt) strong beef stock
2 x 450 g (1 lb) can red kidney beans, rinsed and drained
parsley sprigs, to garnish


1. Heat oil in a large saucepan, add onion and garlic and fry until soft. Add mince and fry until browned.

2. Add seasoning and chilli powder or chillies. Stir in tomato puree, tomatoes and stock. Bring to the boil, cover ana simmer for 45 mins.

3. Add kidney beans, cover and simmer for 15 mins.

4. Serve chilli on a bed of rice, garnished with parsley.

If you use fresh chillies, be sure to remove the fiery seeds first. Fresh chillies can irritate the skin so wash your hands well after handling them.

Substitute for kidney beans

If anyone's not keen on kidney beans, i substituted them for a tin of baked beans at the end of cooking time and it worked well

I added cumin powder to this as well which made it even better! Very easy to make, wonderful in flavour, fool proof... well recommended

What's not to like about kidney beans - they taste of nothing!!? I added worcester sauce to give it a bit of depth. Yummy!

I'ts a good idea to rub some oil into your hands before handling fresh chllis - it stops the juice from penetrating into your skin

I add ground corriander, cumin & basil too

I think this receipe and instructions to making it was awful it turned out to be so bland and horrible i wouldnt even get it to a animal to eat thankfully i have a good hand and spiced it up and made it yummy but without my specialities to cooking this dish was a diaster.!!!!

I'm half way through cooking this for 8 people and it tastes EXACTLY how I want it to. Added a little cummin and basil, no problems :)
and @emzy, if you have specialties to cooking, why are you looking up how to cook a basic dish like this? anyone just "spice" something up, but did you add the right spices?
