Herb Pancakes au Gratin

375 calories per serving

ingredients

serves 8
100 g (4 oz) plain flour
1 egg plus 2 egg yolks
150 ml (1/4 pint) pint single cream
300 - 400 ml (1/2 - 3/4 pint) milk
salt and freshly milled white pepper
50 g (2 oz) butter
225 g (8 oz) cottage cheese, sieved
2 egg whites
225 g (8 oz) lean cooked ham
4 fresh basil leaves, chopped
1 tablespoon chopped parsley
1/2 teaspoon dried thyme
4 tomatoes
100 g (4 oz) Cheddar cheese, grated

method

1. Beat the flour with the egg, yolks and cream until smooth, then stir in sufficient milk to give a thin batter. Season with
salt, cover and leave to stand for at least 1 hour.

2. Melt the butter a little at a time in a frying pan, add and fry the batter to make thin pancakes about the size of a breakfast plate. Beat the cottage cheese with the egg whites.

3. Dice the ham and stir it into the mixture with seasoning to taste and the herbs. Spread the mixture over the pancakes, then roll up the pancakes.

4. Grease a baking dish with butter and fill with the pancakes. Peel and chop the tomatoes and spread them over the pancakes. Sprinkle with the cheese.

5. Brown in a hot oven (220°C, 425°F, gas 7) until the cheese has melted.
