Fruit Buns

Calories 100 per bun,
Preparation time 15 minutes,
Cooking time 15 - 20 minutes,
Oven temperature 190°C, 375°F, gas 5

ingredients

makes 18
100 g (4 oz) butter or margarine
100 g (4 oz) caster sugar
2 eggs, lightly beaten
100 g (4 oz) self-raising flour
75 g (3 oz) currants

method

1. Place 18 paper cake cases on a baking tray or in two deep bun tin trays.

2. Cream the butter or margarine with the sugar until light and fluffy.

3. Gradually beat in the eggs. Carefully fold in the flour and currants, using a metal spoon. Divide the mixture between the paper cases.

4. Bake in a moderately hot oven for 15 - 20 minutes or until well risen and golden brown. Transfer to a wire rack to cool.

To cream fat and sugar, make sure they are at room temperature and soft. Use the flat side of a wooden spoon and beat in one direction, keeping the mixture down in the base of the bowl.

I did this receipe this morning and was very pleased with it with one minor problems after adding the fruit and flour it was a bit dry so added some milk.

Very good recipe, I added a little extra fruit, 5ozs altogether and put glace icing on the top (yummy)

Have just made these and they are really good, but if using large eggs i think I should have used a little more flour.

This recipe always goes down a treat in our house can add cherrys and iceing to it too!
