1. Cut the onions into rings. Wash and dry the braising steak and cut it into 2.5 cm (1 in) cubes with the ham.
2. Heat the oil in a pan, add the onion, ham and beef and fry over a high heat for 5 minutes, stirring continuously. Add the
paprika, salt and pepper, the whole chilli and red wine.
3. Cover the pan and braise over a moderate heat for 40 minutes. Meanwhile peel the potatoes and cut them into 2.5 cm (1 in) cubes. When the 40 minutes are up, add the potatoes to the pan, leave off the lid and cook for a further 20 minutes over a low heat.
4. Finally season to taste with sugar.
Serve with: cucumber or white cabbage salad.
