Sugarless Baked Apples with Dates

ingredients

serves 4
4 large green apples
60 g (2 oz) chopped, unsugared dates
4 tbsps sugar-free muesli
30 g (1 oz) low fat spread
120 ml (4 fl oz) pure apple juice

method

1. Core the apples. Prick the skins in several places, but do not peel.

2. Fill the cavities with a mixture of the muesli and dates.

3. Place the apples in a casserole so that they are touching.

4. Dot the filling with the low fat spread and pour over the apple juice. Bake for 3-4 minutes on HIGH, or until the apples are soft.
