Grilled [Broiled] Trout (Trote Sulla Brace)

ingredients

4 servings
4 Medium trout, cleaned and with the eyes removed
Salt and pepper to taste
2 Garlic cloves, halved
4 Rosemary sprays
3 Tbs Olive oil
1 Lemon, cut into 8 wedges

method

1. Preheat the grill (broiler) to moderate.

2. Place the fish on a flat surface and rub them all over with salt and pepper.

3. Put half a garlic clove and a rosemary spray in the cavity of each fish.

4. Make three shallow cuts on each side and arrange the trout in the lined grill (broiler) pan.

5. Lightly coat the fish with the oil, then grill (broil) the fish for 5 minutes. Remove the pan from the heat and turn the fish over. Brush with the remaining oil and grill (broil) for a further 5 to 6 minutes, or until the flesh flakes easily.

6. Transfer to a warmed serving dish and remove the garlic and rosemary. Garnish with lemon wedges and serve at once.
