Creamed Beets

This Polish dairy dish is a very suitable main course for Shavuot, the Feast of Weeks.

ingredients

serves 8
2 pounds cooked beets
4 tablespoons butter
1/2 teaspoon salt
2 tablespoons wine vinegar
1/2 cup heavy cream

method

1. Peel and chop the beets.

2. Heat half the butter in a skillet over high heat and saute the beets for 5 minutes, stirring frequently.

3. Sprinkle with salt and vinegar.

4. In a small saucepan, melt the rest of the butter and pour it over the beets.

5. Stir, then add the cream and stir again. Serve hot.
