Chicken Bearnaise

Chicken Bearnaise is a classic French recipe using a whole chicken, sausagemeat and various herbs, vegetables and spices.

ingredients

serves 4
1 chicken weighing 1.2 kg (2 1/2 lbs)
1 dry bread roll
150 g (5 oz) lean boiled ham,
1 garlic clove
200 g (7 oz) sausagemeat
2 tbsp chopped chives
4 cups (1 litre) 1 3/4 pint water
1 tsp salt
1 sprig fresh thyme
2 sprigs flat leaved parsley
1 bay leaf
2 small onions
2 small carrots
1 small piece celeriac
2 small leeks
400 g (14 oz) savoy cabbage
200 g (7 oz) french bean (green beans)

method

1. Wash and dry chicken and giblets.

2. Soak bread roll in cold water.

3. Chop ham and giblets. Peel and chop garlic, and combine with ham, giblets, sausagemeat, chives and crumbled bread roll.

4. Fill chicken with stuffing, fastening opening together with cocktail sticks.

5. Bring water to the boil with salt, herbs and bay leaf. Put in chicken and cook, covered, for 1 hour.

6. Peel and chop onions. Clean or scrape carrots, celeriac and leeks, then wash and chop them. Cut cabbage in fine strips. Clean and wash beans, then break into pieces.

7. Add prepared vegetables to chicken and cook all together for an additional 30 minutes.
