4 x 120 - 180 g (4 - 6 oz) veal escalopes
2 small cloves garlic, crushed
225 g (8 oz) low fat, soft cheese
Small bunch chives, chopped
Freshly ground black pepper
1 tsp paprika (optional)
1. Flatten the veal escalopes between 2 sheets of greaseproof paper using a rolling pin and taking care to keep each escalope in one piece. Set aside.
2. Combine the garlic, cheese and chives together and season with salt and pepper.
3. Spread a quarter of the mixture over each of the veal escalopes and roll up like a Swiss roll. Sprinkle with paprika if desired.
4. Arrange in a circle in a dish and cook, uncovered, on HIGH for 8 - 10 minutes. Serve immediately
