450 g (1 lb) swede, peeled
4 tbsps water
Freshly ground black pepper
15 g (1/2 oz) low fat spread
2 tbsps fresh ginger, peeled and grated
Fresh ginger, peeled and cut into thin strips, or parsley, to garnish
1. Cut the swede into small pieces and place in a bowl with the water, sea salt and freshly ground black pepper.
2. Loosely cover and cook on HIGH for 10-15 minutes or until tender, stirring twice.
3. Drain well and mash thoroughly or puree in a food processor with the low fat spread. Stir in the ginger.
4. Reheat on HIGH for 1 - 2 minutes if necessary Serve hot. Garnish with fresh ginger or parsley
