Vegetables In Orange Juice

ingredients

serves 8 - 10
1 lb (450 g) carrots
1 lb (450 g) turnips
1 lb (450 g) sweet potatoes
1 lb (450 g) parsnips
1 lb (450 g) baby onions
2 1/2 pints (1.5 litres) orange juice
2 tsp cornflour

method

1. Peel and chop vegetables. Simmer in orange juice until tender. Drain and place them in a dish.

2. Dissolve the cornflour in a little of the cooking liquid, then stir into remainder.

3. Cook until thickened slightly. Pour over the vegetables and serve.
