Quick-Fried Sliced Beef in Oyster Sauce

ingredients

4 servings
700 g (1 1/2 lb) Fillet steak, cut into thin strips about 5 cm (2 in x 2 1/2 (1 in)
Salt and white pepper to taste
1/4 tsp Ground ginger
1 Tbs Cornflour (cornstarch)
1 Tbs Soy sauce
2 1/2 Tbs Oyster sauce
1 tsp Sugar
2 Tbs Rice wine or dry sherry
75 ml (3 fl oz) 6 Tbs Vegetable oil
1 Medium onion, thinly sliced
1 Garlic clove, crushed

method

1. Rub the beef strips with the salt, pepper, ginger and cornflour (cornstarch).

2. Combine the soy sauce, oyster sauce, sugar and wine or sherry. Set aside.

3. Heat the oil in a large frying-pan. Add the onion and garlic and fry for 30 seconds, stirring constantly. Add the beef strips and fry for 2 minutes, stirring constantly. Pour off all but a thin film of oil from the pan. Pour in the reserved sauce and cook for a further 1 1/2 minutes, stirring constantly.

4. Transfer the mixture to a warmed serving dish and serve at once.
