â€¢ Green beans a la grecque are delicious hot or cold. Cold, they form a simple but sophisticated appetizer.

450 - 550 g (1 - 1 1/4 lb) green beans
150 g (5 oz) tomato puree
60 - 90 ml (4 - 6 tbsp) olive oil
1/2 Spanish onion, finely chopped
1/2 - 1 garlic clove, finely chopped
salt and freshly ground black pepper
1. Top and tail the green beans and slice them in half lengthways.
2. Mix the tomato puree with 425 ml (14 fl oz) water, olive oil, finely chopped onion and garlic.
3. Put the beans in a saucepan, pour over the tomato-onion mixture and season to taste with salt and freshly ground black pepper. Bring to the boil. Lower the heat and simmer gently, stirring from time to time, for 35 - 45 minutes, or until the sauce has reduced and beans are tender.
