Tempura Batter

Tempura batter is suitable for coating deep-fried small pieces of fish and shellfish.

ingredients

1 egg
8 fl oz (250 ml) iced water
1 cup (110 g) plain flour (All purpose), sifted

method

1. Using a balloon whisk or fork, lightly mix together all the ingredients until smooth.

2. Do not beat or overmix. Use straight away.
