Lemon Crunch

ingredients

serves 4
6 digestive biscuits, crushed
1 egg yolk
1 oz (25 g) caster sugar
grated rind and juice of 1 lemon
4 oz (125 g) cream cheese
4 oz (125 g) quark

to decorate:

grated chocolate

method

1. Divide the biscuits between 4 glasses. Blend the remaining ingredients together until smooth.

2. Spoon over the biscuits and chill. Decorate with chocolate just before serving.
