Spiced Mixed Sprouts

ingredients

serves 3 - 4
2 tbsp oil
1 onion, peeled and very finely chopped
2 cloves garlic, peeled and crushed
1 tsp garam masala
large pinch cumin seeds
1/2 tsp cayenne pepper
1 tbsp lemon juice
5 fl oz (150 ml) tomato juice
8 oz (225 g) mixed sprouted beans (chick, mung, aduki)
1 oz (25 g) flaked almonds, toasted

to serve:

soft bread or chapattis

method

1. Heat oil in a pan. Add onion and garlic and cook gently for 5 minutes without colouring.

2. Add the garam masala, cumin seeds, cayenne pepper and ground black pepper. Fry for another 4 minutes.

3. Add the lemon juice, tomato juice and sprouted beans. Cook for 5 minutes.

4. Stir in almonds and serve hot with soft bread or chapattis.
