Tandoori Marinade

ingredients

1 tsp coriander seeds
1 tsp cumin seeds
2 cloves garlic, peeled
1 tsp fresh root ginger, peeled
and grated
10 fl oz (300 ml) natural yogurt
juice of 2 lemons
2 tbsps wine vinegar
1 tsp red chillies
1 small onion, finely sliced
1/2 tsp cayenne pepper

method

In a pestle and mortar grind the coriander and cumin seeds. Add the garlic and ginger and pound too paste. Transfer to a bowl and add remaining ingredients.
