Blackberry Cornbread

ingredients

serves 4 - 6
1 1/3 cup (5 1/2 oz) 150 g plain flour
4 oz (100 g) cornmeal
1/2 tsp salt
2 1/2 tsp baking powder
1/2 cup (8 Tbls) 100 g Granulated Sugar
2 eggs, lightly beaten
3/4 cup (6 fl oz) 180 mlmilk
1/2 stick (2 oz) 50 g butter, melted
300 g (10 oz) blackberries, fresh or frozen

method

1. Preheat oven to 200°C (400°F) Gas Mark 6.

2. Lightly grease a 20 X 20-cm/8 x 8-in baking tin.

3. Sift dry ingredients together.

4. In a separate bowl, combine eggs, milk and melted butter.

5. Pour liquid ingredient into flour mixture and stir well.

6. Add blackberries and mix.

7. Pour batter into baking tin. at 200°C (400°F) Gas Mark 6 until top is lightly browned, about 30 minutes.

8. Cut into squares and serve warm.

I've subsituted the sugar for candarel as I can't eat sugar and it still tastes fabulous. Using benecol margarine makes it that bit healthier and it also comes out lighter. Very easy to make and quick to cook - but be warned, very moorish.....
