12 oz (350 g) black or green olives
5 fl oz (150 ml) olive oil
2 cloves garlic, peeled and bruised
1 tbsp coriander seeds
1 lemon, roughly chopped
1 orange, roughly chopped
1. Slash the olives. Mix the remaining ingredients together then stir in the olives.
2. Pack into a glass jar, seal and marinate for 2 or 3 days in the fridge.
3. Drain the olives and serve with drinks. Use the oil for salad dressings.
4. The olives will keep for about two weeks in the fridge.
