Boiled Knuckle of Pork (Eisbein)

ingredients

serves 10
1.5 kg fresh or salted knuckles of pork

method

1. Place the knuckles of pork into a saucepan and cover with cold water, bring to the boil and skim thoroughly.

2. season and gently simmer for 1 hour.

3. Remove the bones from the knuckles and serve with some of the strained cooking liquor, accompanied by puree of green peas.
