Fried Stuffed Fillet of Plaice (Riga Tel'noe)

ingredients

fillets of plaice
oil
lemon juice
dill and parsley
duxelles of mushrooms
flour, eggwash and breadcrumbs
parsley

method

1. Marinate fillets of plaice in oil, lemon juice, chopped dill and parsley for 1 hour.

2. Spread with duxelles of mushrooms, then roll up and secure with a cocktail stick.

3. Pass through flour, eggwash and breadcrumbs, deep fry in oil and serve garnished with picked parsley.
