Fish Mayonnaise (Mayonnaise de Poisson)

ingredients

5 hard-boiled eggs
1/4 finely shredded lettuce
200 ml mayonnaise
Chosen Fish
10 capers
5 stoned olives
5 cucumber slices
2 tomatoes, either sliced or in wedges

method

1. Cut the eggs into halves or quarters lengthways and place round side upwards on the shredded lettuce.

2. Coat with the mayonnaise and decorate with thin strips of your chosen fish trellis-fashion, capers, olives, cucumber and tomato.
