English Rib Roast

ingredients

serves 16-20
1 fore rib of beef
salt

accompaniments (you may need these)

method

1. Heat the oven to 400°F (200°C) mark 6.

2. Rub a little salt over the fat on the beef and stand the ribs upright in a roasting tin.

3. Roast in the oven for 12 minutes to the lb (450 g) if you like beef pink in the centre but not dripping blood; or 13-14 minutes to the lb (450g) if you like it well done.

4. Remove the meat from the oven and allow it to become quite cold.

5. Chill in the refrigerator before carving.

Accompaniments; Serve with horseradish sauce .

The English would alwyas eat this roast hot with gravy, roast potatoes and yorkshire pudding

I am English and I have never heard of putting the roast in the refrigerator before carving. Yuk it sounds horrible.What we do is to take the Roast out of the oven and let it stand for a short time prior to cutting.

I expect this is a bit like french toast and english muffins... try slowly roasting your ribs at about 160c, 200c is way too high!

Like midge i also eat it with sunday roast trimmings and make the gravy with juices NOT horseradish sauce!
