1. Heat the oven to 400°F (200°C) mark 6.
2. Rub a little salt over the fat on the beef and stand the ribs upright in a roasting tin.
3. Roast in the oven for 12 minutes to the lb (450 g) if you like beef pink in the centre but not dripping blood; or 13-14 minutes to the lb (450g) if you like it well done.
4. Remove the meat from the oven and allow it to become quite cold.
5. Chill in the refrigerator before carving.
