Baked Liver Patties

ingredients

serves 4 - 6
1 lb (500 g) liver
1 onion, finely chopped
pinch grated nutmeg
1/2 tsp ground coriander
1 1/2 tsp salt
freshly ground black pepper to taste
1 tbsp vinegar
1 egg, beaten
2 tbsp plain flour (All purpose)
1/2 tsp baking powder
1 caul fat

method

1. Place liver in boiling water for 1 minute and remove membrane.

2. Shred liver with a fork. Add all ingredients except caul, fat to liver and mix well.

3. Spoon liver mixture onto caul fat, fold over and secure with cocktail sticks.

4. Place in ovenproof dish and bake at 160°C (325°F) gas 3 for 1 hour or until cooked.
