Potato Pancakes (Grundrezept Fur Kartoffelpfannkuchen)

ingredients

serves 10
2 kg raw potatoes
175 g finely chopped onion
3 beaten eggs
75 g flour and seasoning

method

1. Finely grate 2 kg raw potatoes and leave to drain on a sieve for 10 minutes.

2. Combine with 175 g finely chopped onion, 3 beaten eggs, 75 g flour and seasoning.

3. Shallow fry 40 g spoonfuls in a pancake pan until golden brown on both sides.

A slight variation in the preparation

The second time I made this dish I didn't have a sieve so used a kitchen towel (cloth) and being in a hurry twisted the towel to force out the excess water, this gave a much drier "flour" and improved the texture of the final pancake... give it a try the result was very good.

What seasoning do you use? I was thinking salt pepper and/or maybe nutmeg/paprica
