Chicken with Anchovy Mayonnaise 

Chicken boiled and poached with basil, parsley, vegetables, bay leaf and clove, and served with a flavorful mayonnaise of anchovies, capers, gherkin, tuna, lemon juice, parsley and seasoning.

Boiled Fowl 

A simple recipe of fowl rubbed with lemon and pan boiled with onion, carrot, bouquet garni and peppercorns, then served with parsley, lemon or cream sauce and grilled/broiled bacon rolls.

Boned Highland Chicken

Fried chicken pieces and giblets with wine, shallots, parsley, basil and lemon.

Pasta and Chicken Stew 

Various vegetables accompany this chicken stew recipe including courgettes and aubergines. The flavour is enhanced with peppercorns and allspice berries. Served with pasta.

Oriental Chicken and Mushroom Stew 

Chicken with potato, tofu and various vegetables; mushrooms, bean sprouts, carrots, and mangetout. Ladled with a soy sauce and sherry chicken stock.

Beggar's Chicken 

A traditional Chinese dish of whole chicken covered in a marinade of dark soy sauce, wine, ginger, spring onions and oil, then stuffed with fried pork, mushrooms, cabbage, onion, ginger, soy sauce and pepper, wrapped in lotus leaves in a roasting bag and coated with a floury paste before baking.

Light and simple rice salad made using whole chicken, mushrooms, peppers, lemon juice, garlic and celery.

Chicken Casserole with Ginger 

A simple whole chicken recipe consisting of fried pieces of whole chicken with onion, garlic, ginger, papaya, Worcestershire sauce and spinach.

Chicken in Tarragon Sauce 

A small whole chicken cooked with garlic, bay leaves, lemon, white wine, vinegar, pepper, tarragon and olives.

Chicken Cooked in Coconut Milk 

Quartered whole chicken recipe with lengkuas, lemon grass, lime, bay leaves, sugar, coconut milk and a garlic, onion, nut and coriander paste. Served with rice and deep-fried onions.

Coq Au Vin (Chicken in Red Wine) 

Fried and casseroled whole chicken with wine, garlic, mushrooms, onions, carrots, herbs and pickling onions. Traditionally made with a mature cockerel in which case, allow at least 4 hours' cooking time. A French classic; serve with boiled rice.

Chicken Garam Masala 

A curry-style recipe using chicken joints with onions, garlic, ginger, cumin, coriander, turmeric, chilli powder, tomatoes and garam masala.

Green Curry Coconut Chicken 

A curried recipe for whole chicken simmered with coconut milk, stock and lime. Cooked with a delicious paste of coriander seeds, caraway seeds, chillies, sugar, salt, lemon grass, ginger, garlic, shallots, shrimp paste, coriander, mint, nutmeg. Also combines sweet potatoes, squash and beans.

Chicken Hotpot 

A traditional English Hotpot recipe with chicken, potatoes, leeks, butter beans, chicken stock, Dijon mustard, tomato puree and parsley.

Pot Roast Chicken with Onion Sauce 

Traditional recipe for chicken stuffed with a lemon, parsley and walnut breadcrumb stuffing, seasoned and casseroled and served with a simple onion sauce.
